Pumpkin Mushroom Soup
From the first cool autumn day and way beyond Thanksgiving your family will enjoy this wonderful seasonal dish.

Ingredients
- 1/2lb sliced fresh mushrooms
- 1/2cup chopped onion
- 2tbsp butter
- 2 tbsp flour
- 1tbsp curry powder or cumin
- 3cups chicken broth
- 1 lb can of pumpkinnot pumpkin pie filling
- 1tbsp honey
- 1dash nutmeg
- salt and pepper to taste
- 1cup heavy creamcan substitute half and half to lighten recipe
Instructions
- Saute mushrooms and onion in butter until softened. Stir in flour and curry. Gradually add the broth, then the pumpkin, honey, and seasoning to taste. Stir, while cooking, for 15 minutes. Add cream and heat though without boiling. To with a dollop of your sour cream and/or chopped chives if desired.
