Ingredients
- 1/2 lb - sliced fresh mushrooms
- 1/2 - chopped onion
- 2 tbsp - butter
- 2 tbsp - flour
- 1 tbsp - curry powder or cumin
- 3 cups - chicken broth
- 1 lb - can of pumpkin - not pumpkin pie fillings
- 1 tbsp - honey
- 1 dash - nutmeg
- salt and pepper - to taste
- 1 cup - heavy cream - can substitute half and half to lighten recipe
Instructions
1. Saute mushrooms and onion in butter until softened. Stir in flour and curry. Gradually add the broth, then the pumpkin, honey, and seasoning to taste. Stir, while cooking, for 15 minutes. Add cream and heat though without boiling. To with a dollop of your sour cream and/or chopped chives if desired.
