Crimini (also known as Cremino) (Agaricus bisporus) is a tan to brown mushroom with firm buttery texture. The Crimini has a similar shape to the White mushroom and is up to 3 inches in diameter. It has closed gills as it is immature Portabella.

Shiitakes (Lentinus edodes) range in color from tan to dark brown with broad, umbrella-shaped caps, wide open veils, and tan gills. Shiitakes can be up to 3 inches in diameter and their caps have a soft, spongy texture. When cooked, Shiitake mushrooms, have a mild, yet rich and woodsy flavor with a meaty texture.

Increase Your Vitamin D

Mushrooms are the only fruit or vegetable source of this critical vitamin. Mushrooms produce vitamin D when in sunlight so they are often called the sunshine vitamin. Adults under 50 are recommended to get 400 to 1,000 IU daily.

Boost Your Immune System

A study done on mice and published by the American Society for Nutrition found that white button mushrooms may promote immune function by increasing the production of antiviral and other proteins that are released by cells while they are trying to protect and repair the body’s tissues. A later study showed that these mushrooms promoted the maturation of immune system cells — called dendritic cells — from bone marrow. According to the researchers, these mushroom benefits may help enhance the body’s immunity leading to better defense systems against invading microbes.

But a study at Penn State university showed that the oxygen radical absorbance capacity (ORAC) — a measure of a food’s total antioxidants — of crimini and portobello mushrooms were about the same as for red peppers.
