White Button
White Button (Agaricus bisporus) The White Button mushroom is the most popular grocery store mushroom. They’re very easy to cook, hold their flavor well, are healthy and affordable. When selecting a White Button Mushroom, look for young specimens with unopened caps and no signs of bruising or sliminess.
White Button Facts
- The White Mushroom will last longer in your refrigerator than many other mushrooms, usually around a week. It's better to store them in a paper bag rather than plastic - that will help them last longer!
- Can be used in almost any recipe.
- Try them in soups, stews, and stir-fry.
- Use them as a flavorful topping for meat, fish, poultry, or pizza.

Longer growing cycles
Portabella
Portabella (Agaricus bisporus) Impressive in size and appearance with a diameter up to 6 inches. Portabellas have a longer growing cycle than Whites and Criminis resulting in a deep earthier full-bodied flavor. They have a rich medium dark brown color.

Firm buttery texture
Crimini
Crimini (also known as Cremino) (Agaricus bisporus) is a tan to brown mushroom with firm buttery texture. The Crimini has a similar shape to the White mushroom and is up to 3 inches in diameter. It has closed gills as it is immature Portabella.

Rich woodsy flavor
Shiitake
Shiitakes (Lentinus edodes) range in color from tan to dark brown with broad, umbrella-shaped caps, wide open veils, and tan gills. Shiitakes can be up to 3 inches in diameter and their caps have a soft, spongy texture. When cooked, Shiitake mushrooms, have a mild, yet rich and woodsy flavor with a meaty texture.

Largest species
Oyster
Oyster (Pleurotus) mushrooms are a species of Pleurotus and are some of the most commonly cultivated edible mushrooms in the world. The king trumpet mushrooms are the largest species in the oyster mushroom genus. They are simple to cook and offer a delicate and sweet flavor.

- Used in a stir-fry or sauté because they are slightly thin, and so will cook more evenly than other mushrooms.

Increase Your Vitamin D
Mushrooms are the only fruit or vegetable source of this critical vitamin. Mushrooms produce vitamin D when in sunlight so they are often called the sunshine vitamin. Adults under 50 are recommended to get 400 to 1,000 IU daily.
Boost Your Immune System
A study done on mice and published by the American Society for Nutrition found that white button mushrooms may promote immune function by increasing the production of antiviral and other proteins that are released by cells while they are trying to protect and repair the body’s tissues. A later study showed that these mushrooms promoted the maturation of immune system cells — called dendritic cells — from bone marrow. According to the researchers, these mushroom benefits may help enhance the body’s immunity leading to better defense systems against invading microbes.

When it comes to antioxidants — the substances that help fight free radicals that are the result of oxidation in our body — we’re more likely to think of colourful vegetables than neutral-hued mushrooms. But a study at Penn State university showed that the oxygen radical absorbance capacity (ORAC) — a measure of a food’s total antioxidants — of crimini and portobello mushrooms were about the same as for red peppers.
