When most people focus on eating well, they focus on overall nutrients like protein, fat, and carbohydrates. However, depending on your diet, it’s still common to have deficiencies in key vitamins and minerals your body needs for optimal health and function—such as zinc.

Amber Sayer (The Manual, Nov. 17, 2021) explains in her article, "Zinc deficiencies are very common in vegans and vegetarians, but many people would benefit from increasing their dietary intake of this immune-supportive mineral. The mini pumpkin — a variety called the Jack Be Little — is perfect for stuffing, as its sweet flesh quickly softens in the oven without pre-cooking. Apricot-colored chanterelle mushrooms are one of the best to use for this dish because of their earthy sweetness and silky texture, but the more common cremini mushroom works well too. Swiss chard adds a touch of bitterness that contrasts with the sweetness of the caramelized onion and mushrooms.
