Shrimp and Mushroom Linguini with Creamy Cheese Herb Sauce
Grab a bag of frozen shrimp and some linguini and you've got one heck of a meal!

Ingredients
- 18 oz package of linguini pasta
- 2tbsp butter
- 1/2lb fresh mushrooms, sliced
- 1/2cup butter
- 2cloves garlic, minced
- 13 oz package cream cheese
- 2tbsp chopped fresh parsley
- 3/4tsp dried basiluse fresh if you have it available
- 2/3cup boiling water
- 1/2lb cooked shrimp
- 1/3cup dry white wineoptional
Instructions
- Bring a large pot of lightly salted water to a boil. Add linguini and cook until tender, about 7 minutes. Drain.
- Clean shrimp and pat dry with a paper towel. Drizzle pan with olive oil and a little crushed garlic and sauté the shrimp until firm and color changes (turn, approx. 3 minutes each side). If you have a little white wine opened you can add 1/3 of a cup to this step and let it reduce off.
- Meanwhile, heat 2 tablespoons butter in a large skillet over medium-high heat. Add mushrooms; cook and stir until tender. Transfer to a plate.
- In the same pan, melt 1/2 cup butter with the minced garlic. Stir in the cream cheese, breaking it up with a spoon as it melts. Stir in the parsley and basil. Simmer for 5 minutes. Mix in boiling water until sauce is smooth. Stir in cooked shrimp and mushrooms; heat sauce through.
- Toss linguini with shrimp sauce and serve.
