Pumpkin Mushroom Soup

Ingredients
- 1/2lb sliced fresh mushrooms
- 1/2 cup chopped onion
- 2 tbsp butter
- 2tbsp flour
- 1tbsp curry powder or cumin
- 3cups chicken broth
- 1lb can of pumpkinNOT pumpkin pie filling
- 1tbsp honey
- 1dash nutmeg
- salt and pepper to taste
- 1cup heavy creamcan cut to half and half
Instructions
- Sauté mushrooms and onion in butter until softened. stir in flour and curry. Gradually add the broth, then the pumpkin, honey, and seasonings to taste. Stir, while cooking, for 15 minutes. Add cream and heat through without boiling. Top with a dollop of sour cream if desired. If you're feeling fancy, also top with chopped chives.
